Product Information

The showier relative. Tahitian pods from Indonesian growers are longer, darker and visibly oilier than planifolia, with a softer, more perfumed aroma that many pastry chefs prefer wherever vanilla is the star rather than the support — gelato, cream fillings, panna cotta, white chocolate. Offered in two grades plus Mixed lengths, by the kilo.
Where planifolia is direct, Tahitian is sidelong — floral first, then dried cherry and a soft, almost boozy depth that unfolds as it warms. The character holds exceptionally well in cold preparations, which is why it is a gelato maker's favourite.
Practical guidance, from first split to final plate:
  • Split the pod lengthwise and scrape out the seeds with a small knife — the oily pods split generously.
  • Fold the seeds into gelato and ice cream bases, cream fillings and custards.
  • Infuse the pod into warm milk, cream or white chocolate before straining.
  • Use in panna cotta, crème brûlée and any dessert where vanilla is the lead voice.
  • Steep in syrups and fruit preparations — the floral register pairs naturally with stone fruit and berry.
  • A single pod (roughly 6–9g) is the classic measure for a 500ml preparation.
Keep the pods sealed in an airtight container in a cool, dark place, away from heat and light. Tahitian pods are oilier and dry out more slowly, but the same rule applies — sealed, dark and patient.
Graded by pod length: 14–15 cm, 16 cm, Mixed lengths. Longer pods carry more seed and command a premium. Mixed lengths combine grades — the most practical choice for kitchens where flavour matters more than uniformity.
